Carbohydrates: Villain or Vital?

We are living in a culture of fear. And when it comes to nutrition, food fears affect all of us.

“That will make you fat.” “This one is healthier.” “Those raise cholesterol.” “This helps you lose weight.”

Right now, carbohydrates seem to be the biggest villain. Yet ask most people to define a carbohydrate, and you’ll hear: “pasta,” “potato chips,” or “sugar.”

A carbohydrate is simply a macronutrient—one of the primary building blocks of food. In fact, carbohydrates often give plants their structure. Our suspicion of them is justified in some circumstances—but broadly speaking, the fear is misplaced.

It helps to think of carbohydrates in two categories: simple and complex. Or more practically, processed and whole.

When Carbohydrates Are Stripped Down

Simple carbohydrates usually begin as whole plants but are processed to the point where little fiber or nutrition remains.

Sugar may come from corn, sugar cane, or maple trees—but no matter its origin, it has been reduced to a highly refined form. It delivers immediate pleasure to our taste buds and a rapid spike in energy. Very little digestion is required.

But that quick satisfaction doesn’t last. Without fiber or structure, the energy fades quickly. The gut signals the brain for more. Think cravings.

Flour is another example. White breads and pastas are not quite as rapid as straight sugar, but the effect is similar. When fiber is removed, digestion speeds up, blood sugar rises quickly, and hunger soon follows.

Carbohydrates in Their Whole Form

Complex carbohydrates, on the other hand, are the intact, fibrous parts of whole plants.

Think red beans, pinto beans, chickpeas. Think oats, barley, brown rice, quinoa.

These foods have sustained cultures around the world for thousands of years. They provide essential energy for muscle and liver cells. Because they contain fiber and structure, they digest more slowly, provide steadier energy, and are far less likely to trigger post-meal cravings.

It is no accident that societies performing physical labor relied on whole grains for breakfast and lunch. Nor is it surprising that many elite endurance athletes still do.

The difference is not the carbohydrate itself—it is whether the fiber remains intact.

Fiber: The Missing Conversation

Fiber is a principal component of whole plant foods. It is not optional for long-term health.

Fiber feeds the gut microbiome, the community of organisms that help regulate immune function and communicate with infection- and cancer-protecting cells. It stabilizes blood sugar. It helps regulate cholesterol by binding to it in the digestive tract and escorting it out of the body. Most fiber is not digested at all—its benefits occur within the gut itself.

Plants contain fiber. Animal foods do not. Muscle and organ tissues contain no fiber.

Can we survive without fiber? Yes. The human body adapts remarkably well. History shows that during winters and famines, humans survived with few plants available. Today, some people follow carnivore-style diets and report short-term improvements.

But surviving is not the same as thriving.

Long term, consistently low-fiber eating slowly undermines cardiovascular, metabolic, and gut health. The effects are gradual—so gradual that they often go unnoticed for years. What you eat consistently today may shape your health twenty years from now.

Despite dietary guidelines promoting plant foods for decades, the average American diet remains low in fiber and high in refined carbohydrates and fats. The rise in obesity, diabetes, and metabolic disease has not been sudden—it has been cumulative.

A Simpler Way to Think About Food

Instead of asking, “Is this carb good or bad?” ask: “Is this food whole?”

Ultra-processed foods are not simply carbohydrates. They are foods that began whole but have been broken apart, refined, colored, flavored, texturized, or chemically altered. They may advertise added nutrients, but that does not restore what was lost.

Interestingly, many refined carbohydrate foods are also high in fats and oils. They are engineered for flavor and shelf life—not long-term health.

Choose carbohydrates that still resemble plants. Add beans, lentils, oats, barley, brown rice, and whole fruits. Learn to recognize real food—not just labels like “carb” or “protein.”

And stop counting. Health does not have to feel complicated or threatening.

If your goal is not just the next season of life but the long game, reconsider your relationship with fiber-containing whole foods. Carbohydrates in their intact form are not the enemy.

They may be one of your most reliable allies for a long, steady, vibrant life.
