ROCKINGHAM — The Richmond County Chamber of Commerce hosted a ribbon-cutting ceremony Thursday afternoon to celebrate the grand opening of Mexibites, a new Mexican restaurant located inside Goodwill Industries in Rockingham. Local officials and community members gathered to welcome the business and mark its arrival as a new addition to the county’s growing food scene.
Mexibites offers build-your-own burritos, bowls, tacos and quesadillas, along with a bakery serving fresh, authentic Mexican baked goods. The restaurant’s variety and convenience have already made it a popular lunch spot for locals.
Chamber President and CEO Kristi King welcomed guests and thanked Mexibites for partnering with the Chamber, noting the restaurant’s early success and growing popularity in the community.
“This is an exciting day for Mexibites and for the Chamber of Commerce,” King said. “We’ve heard so many great things about this place. Everywhere you go, people are saying, ‘I love it! I go there every day for lunch!’ We’re thrilled to officially welcome them and celebrate their success.”
Rockingham Mayor John Hutchinson followed by praising the new addition to the city’s dining options and highlighted how much residents appreciate good food and local entrepreneurship.
“One thing we love in Rockingham and Richmond County is good food,” said Hutchinson. “I hear not only good things about the Mexican dishes that you prepare, but the bakery as well. I want to wish you years and years of success here, and invite you to call on us any time we can be of help to you.”
Richmond County Commissioner Jeff Smart noted that Mexibites has already become a favorite lunchtime spot for his employees.
“I know at my work in Hamlet, my employees leave for lunch and come back with your food, so I know it must be good,” Smart joked. “We wish you the very best, and please reach out to the Commissioners, that’s what we are here to do. To promote and support places like yours.”
Owner Jose Huerta closed the event by thanking the crowd for their support and inviting people to experience the restaurant’s offerings.
“We are so excited to move forward and make this successful. I would like to encourage people to come and try it out.”
